There are some of us who can’t seem to get along with dairy. That means no ice cream, no yogurt (seriously, soy yogurt is AWFUL), and sadly, no pudding. Not so fast. Any one can enjoy Chia Chocolate Pudding!

Chia seeds are a hot trend right now in the food and nutrition world. Yes, they are the same seeds that you spread on your ceramic pet to create “pottery that grows!” Who knew chia seeds are also really good to eat? Chia seeds are a natural source of dietary fiber, protein, and Omega-3’s, calcium, iron, and magnesium. So you can have your pudding and eat it too.

For this treat you will need:

  • 2 1/2 C milk (I used Blue Diamond Almond Breeze Almond and Coconut milk)
  • 1/2 C chia seeds
  • 2-3 Tbsp Truvia stevia sweetener
  • 3 Tbsp Cocoa powder

Combine all ingredients in a screw-top container (like a large mason jar), and shake, shake, shake. You will need to refrigerate the pudding for several hours before enjoying, shaking it periodically to make sure the seeds disperse evenly throughout the pudding. Once it sets up you’ll have a cool, creamy pudding with a little crunch from the seeds.

I top mine with a dollop of low-fat non-dairy whipped topping. I mean, this is a treat after all.

    this sounds SOO good! Where in the world do you buy chia seeds though?? Also, can you use regular almond or soy milk?

      Yes, you can use juice, water, milk . . . whatever. (Juice makes a nice jam-like product.) Incidentally, when you try to make instant pudding with soy or almond milk, it won’t set up. If you add 1/4 cup of Chia seeds to the regular instant pudding (1 oz. pkg.) make with soy or almond milk, it will set like a charm. You get your yummy pudding with the health benefits of Chia seeds! Yum!
